Will I lose Action Memo or S Note if I root and flash custom rom?

I am considering to root and flash custom rom, I am just thinking if I will lose some pre installed apps like Samsung's Action Memo and S Note. Those two apps are my favorite and I don't want to lose them.

What are other important things should I know before rooting or flashing custom roms. How about my files and datas saved in phone's memory?

Please help. I would really appreciate your response l. Thank you in advance. :thumbup::)
