Let's talk about Roms

Seeing how I'm going to be with my phone for some time. I'm going to root and flash a Rom on it. But before I dive in. I'd like to get some feedback as to which Roms are stable enough to use as a daily driver and are as close as you can get to vanilla. I dont care about tripping knox if that helps. Thanks. ..
