Is it safe to uninstall bloatware or should I just freeze them?

I usually like to uninstall bloat, but I've seen some people get stuck in boot loops if they've uninstalled bloat and use an OTA update, but has this happened for everyone? Or should I just freeze the apps? I like to uninstall them to free up space, but as far as I know freezing them doesn't free up memory, does it?
